4 Hour Granola

Serves: makes 1 mason jar full
Ingredients
  • 2¼ cups rolled oats
  • ½ cup raw almonds, roughly chopped
  • ¼ cup flax meal
  • ⅓ cup pumpkin seeds
  • ½ cup shredded coconut
  • ½ tsp cinnamon
  • ⅛ tsp salt
  • 3 Tbsp maple syrup
  • ¼ cup olive oil
Instructions
  1. Preheat oven to 225F.
  2. In a large bowl, mix oats, almonds, flax meal, pumpkin seeds, coconut, cinnamon, and salt.
  3. Drizzle in olive oil and maple syrup, and work the mixture with your hands until evenly coated. Spread in a single layer on a rimmed baking sheet and bake for 4 hours, stirring once halfway through. Let sit until completely cool before storing.
