Supergreen Avocado Chickpea Pancake

Ingredients
  • 25g fresh spinach (one large handful)
  • ⅓ chickpea flour
  • 2 tsp zaatar
  • ⅛ tsp salt
  • ½ cup water
To top
  • Avocado
  • chili oil (optional)
  • walnuts (optional)
Instructions
  1. Roughly tear or chop the spinach, place into a medium microwave-save bowl, and microwave for 30 seconds.
  2. Add chickpea flour, zaatar, and salt. Slowly incorporate water and mix until no lumps remain.
  3. Heat a large non-stick skillet over medium heat. When hot, add a drizzle of oil and swirl it around until the pan is well-coated (you can also use a paper towel or silicon brush for this).
  4. Pour batter into pan and use the back of a spoon to spread it. Cook for 3-5 minutes until golden on the bottom, flip, and cook for an additional 3 minutes.
  5. Top with avocado, chili oil, walnuts...and enjoy!
