Grilled Halloumi Kale Salad with Apple & Sweetcorn

Ingredients
  • 100g halloumi (Greek cheese), sliced ½ inch thick
  • high heat oil, to brush
  • 1 bunch lacinato (dinosaur) kale
  • ½ large Fuji apple, diced
  • 2 cobs corn
dressing
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1½ Tbsp tahini
  • ⅛ tsp salt
  • pepper, to taste
Instructions
  1. Wash and de-stem the kale and slice into thin strips, about ½ inch wide.
  2. In a small jar, combine all dressing ingredients and shake vigorously until it emulsifies. Pour dressing over kale and massage for 1 minute. Let sit.
  3. Heat a small frying pan over medium-high heat. Lightly oil the halloumi and fry for a few minutes on each side, until golden.
  4. Place the husked corn in a large bowl and using a knife, slice off the kernels.
  5. Divide kale into two bowls and top with apple, corn, and halloumi.
